With the summer bbq season starting, here are some interesting salads that are packed full of flavour and nutritious ingredients, which make a great addition to your bbq!

– Healthy salads do not have to be boring or dull, the addition of herbs and dressings make these zesty and delicious! These are also great additions to your lunch box – creating deli style salads at home is the much cheaper option than buying your lunch out and about.


The following healthy recipes are:

→ Vegetarian (with vegan options)

→ Delicious flavour

→ Deli Style

→ Pep up your lunchbox

→ Quick and cheap to make


Other ingredients to consider (think colourful): rocket, beetroot, red cabbage, asparagus, yellow pepper, cherry tomatoes, courgette, olives, watercress, grilled artichokes, roasted veg such as butternut squash/broccoli/peppers/red onion, humous, butter beans, pinto beans, basil and strawberries!

1 cucumber chopped

1 red onion finely chopped

1 can of chickpeas – drained

Juice of 1 lime

Salt & pepper

Splash of olive oil

Handful of corriander chopped

Crumbled Feta for the top (optional leave out if making vegan)

1/2 head of white cabbage shredded finely

Big Handful of parsley chopped

Splash of olive oil

Handful of grated parmesan (optional – leave out if making vegan)

Juice of 1 lemon

Chilli flakes (optional)

Bag of lamb’s lettuce

4-5 Radishes finely sliced

Blueberries – big handful

Orange zest to decorate

Dressing: juice of 1/2 orange, olive oil (2tbsp), Apple cider vinegar (1 teaspoon)

Option to add mozzarella if not making vegan
